An elusive spirit with roots in 19th century France and Switzerland. Then as now, it tastes of black licorice balanced with herbaceous hints of fennel and peppermint. A slight bitterness stems from the eponymous artemisia absinthium—wormwood. This Absinthe has a striking green colour; entirely natural, derived from the chlorophyll of infused herbs. As the seasons change and greens turn to yellow, so too will absinthe, as if it were itself somehow alive.
For an authentic experience, water the absinthe generously; cold, drop by drop until the colour changes to a milky white and the flavour blossoms.
